The coum quat comes originally from northern Japan and China. The meaning of the word is golden fruit.  It was introduced in Corfu in 1860 by agronomist Merlyn. The cultivation of fruit takes place mostly at the northwestern part of the island and it is the main agricultural products.

Mavromatis factory was founded in 1965, and is entirely family owned and specialized in coum quat production. The annual production reaches one million bottles and 50 tonnes of sweets. Other activities of the factory is ouzo, brandy and twenty various fruit liqueurs producing. The red coum quat, with 22 or 25 degrees of alcohol, is a liqueur with a unique flavor and aroma that is made from the peel of the fruit. Served neat, with ice or mixed with juice or strong drinks (vodka, brandy, whiskey, etc.). It adds a unique flavor to fruit salads, ice cream and desserts.
