Famous for its yogurt, Dorkada is a refugee village in the province Lagada. Locals, along with the culture and their belongings, brought the art for the manufacture of the Dorkada traditional yogurt. Today, there are seven yogurt production plants in Dorkada which also produce feta cheese, cream cheese, ricotta, sour cheese, katiki, butter and ariani, delivering the superior quality products to all nearby prefectures.
The most famous of all is the Dorkada yogurt, which is made in the same way as centuries ago, but now with modern instruments. Its main feature is the kaimaki cream which covers the entire surface of the yogurt. To achieve this, the Dorkada yogurt producers throw the hot milk from high above in the bowl, so as to create a rich foam. When calm, yogurt is heated again to create this compact, creamy baked crust.
